  • 1/4 tsp garlic powder

  • 1/4 mustard powder

  • 1/2 tsp Himalayan Salt

  • 1 tbsp rice vinegar

Three Easy Methods

Hand Immerser ~ Fastest Method (Less than 20 seconds.)

  1. Combine all ingredients in a wide-mouth mason jar.

  2. Blend until the eggs and oil fully emulsify into a smooth mayonnaise.

Food Processor/Blender

  1. Combine the eggs, rice vinegar, garlic powder, and mustard powder in a food processor or blender.

  2. While blending, slowly add the olive oil until the mixture emulsifies and thickens.

Chef's Notes

This mayonnaise relies on proper emulsification rather than additives to achieve its texture. Using whole eggs creates a stable, creamy base, while olive oil lends body and depth without masking flavor, resulting in a clean, versatile condiment that feels both fresh and intentional.

Tips

~Add Subtle Sweetness: For a hint of sweetness, blend in a small amount of honey.

~Make It Roasted Garlic Aioli Mayonnaise: Turn this base into an aioli by blending it with roasted garlic.
