One-pan perfection: Bone-in thighs, hard-seared for a crusty exterior that locks in every drop of juice before an oven-finish in sticky honey-garlic nectar. A bed of fluffy white rice provides a light, airy counterpoint to the richness, finished with a fresh, sharp snap of green onion.

Ingredients
-
4 bone-in, skin-on chicken thighs
-
½ tsp Himalayan salt
-
¼ tsp black pepper
-
½ tsp garlic powder
-
½ tsp onion powder
-
2 tbsp olive oil
-
3 tbsp goat’s butter
-
1 tbsp rice flour
-
2 tbsp chopped garlic (about 6 cloves)
-
1 tsp dried thyme
-
½ cup honey
-
¼ cup rice vinegar
-
Green onions, chopped, for garnish
Directions
-
Preheat the oven to 400°F.
-
Heat a large oven-safe pan over medium-high heat with olive oil.
-
Season the chicken with salt, pepper, garlic powder, and onion powder.
-
Place the chicken skin-side down in the hot pan and cook for 3–4 minutes, until the skin is golden and crisp. Flip and cook for another 3–4 minutes.
-
Remove the chicken from the pan and set aside.
-
In the same pan, add the butter, garlic, and rice flour. Cook for about 1 minute, stirring constantly, until fragrant. Do not allow the garlic to burn.
-
Add the honey and rice vinegar, stirring until the sauce thickens slightly, about 2–3 minutes. Stir in the dried thyme.
-
Return the chicken to the pan, skin-side up, and spoon the sauce over the top.
-
Transfer the pan to the oven and bake for 45 minutes, or until the chicken is fully cooked and tender.
-
Let the chicken rest for a few minutes before serving. Garnish with chopped green onions and serve over white rice.
Chef's Notes
Using bone-in, skin-on chicken thighs ensures a juicy interior while allowing the skin to crisp beautifully before finishing in the oven. Rice flour thickens the sauce gently without clouding the honey’s natural sweetness, keeping the balance clean and refined.
Tips
~Crisp First: Searing the chicken skin-side down before baking locks in moisture and adds depth to the finished dish.
~Gentle Heat: Keep the sauce moving and the heat moderate when adding honey to prevent scorching and preserve its floral notes.
